Mock rice pudding

Mock rice pudding

I was going to have a scone for breakfast, at AJ's. Then I remembered I'm trying to be more frugal these days (sigh) so I made some mock rice pudding.

I made some rice over the weekend so I just scooped some out, poured 2% milk over it, along with 1 teaspoon sugar and spinkled that with cinnamon (see picture). You could also add a splash of vanilla and that would be nice (anisette might work too). It looks something like what my host mother in Vitoria, Spain used to make. She called it Arroz con leche. I will have to ask her daughter for the recipe and post it here.

In the meantime, try this mock version. It's pretty tasty!
