Mock nachos

I am not a cheesy person. I like cheese on pizza and in baked pasta, but that's it. I also like ricotta in cannoli, but that's it, really.

So, today I made mock nachos. Mock nachos for me consist of 1/2 can of pinto beans heated in the micro for 30 seconds, on top of tortilla chips and on the side I had grape tomatoes and sliced jicama.

And this week I was gifted some homemade salsa that has tomatoes, onions, jalapeños, salt and garlic. So I put some of that on top, too.

Sorry there's no photo. I just inhaled it (like a garbage disposal) since I was really hungry.

Lean protein and veggies. A healthy lunch option (minus the tortilla chips since they were fried).
