Whole wheat penne pasta salad

This yummy pasta salad goes well with a few salami slices. Mmmm...


I've posted this salad before, but it's worth posting again, since it is light summer food, and economical (and healthy too).

I boiled 2 cups of Trader Joe's whole wheat penne and added it to:

2 chopped roma tomatoes
3 chopped guindilla peppers (TJ's)
1/2 cup whole black olives (I buy SeƱor at Food City since they are frequently 99 cents)
2 tablespoons of crushed fresh (previously frozen) basil

I dress this with TJ's California Estate olive oil, salt, cracked pepper and red wine vinegar. You can eat it right away, or wait until it comes to room temperature.

You could serve this with some baked oregano chicken thighs. Just put your chicken on a cookie sheet or other pan that is lined with foil. Sprinkle liberally with dried oregano. Bake at preheated 400 degrees for 1 hour. Baste a couple of times during the cooking process.

Make this salad today. Your taste buds and your tummy will thank you!
