What's baking - banana nut bread

You will thank yourself after making and trying this yummy bread.


I have posted this recipe before, but it is worth posting again, since this banana nut bread is THAT good.

Make sure your bananas are very ripe and then you can use only 3/4 cup sugar.

4 tablespoons butter at room temperature, or melted in the micro
1 cup sugar - I use Zulka azucar moreno from Food City, it is unprocessed
2 eggs
2 large bananas
1 teaspoon baking soda
2 cups flour
1/2 tsp. salt
1/3 cup milk
1 tsp lemon juice - I used lime since I was out of lemon and it worked fine
1/2 cup walnuts or pecans

Cream your butter and sugar together. Add eggs, and beat. Add bananas and beat. Add milk and lemon juice and beat. Add dry ingredients and combine. Finally add your nuts and fold them in so they do not break into tiny pieces.

Bake in a buttered loaf pan at 400 degrees for 35 mins. It will come out nice and brownish like the one pictured.

It's great for breakfast, or for sharing with others...say, on Easter Sunday.
